  • 125 g tapioca
  • 450 ml coconut milk

Method

Tapioca Pudding

  1. Place the tapioca in a pan and cover with cold water and soak for 30 minutes.
  2. In a separate pan, bring to the boil the 450 ml of coconut milk, kaffir lime leaf, grated ginger, vanilla and 3 tablespoons of palm sugar. Remove from the heat and leave to infuse for 30 minutes. Strain into a bowl.
