  • 1 lemon, juice and zest
  • 140 g butter
  • 50 g milk

Method

  1. Bring the lemon juice and zest, butter, milk and vanilla to the boil and set aside.
  2. Combine the flour and baking powder.
  3. In a separate bowl, whisk the eggs and sugar and slowly add to the flour and baking powder to make a paste; add little by little, whisking from the middle to ensure no lumps form.
  4. Pass the hot butter mix through a fine chinoi
