This sauce is a particular specialty of La Spezia, whose surrounding waters have long hosted mussel farms, and whose cooks have found inspiring ways to use them. Mussel sauce works well with trenette, corzetti del Levante, or maccheroni, and is delicious when served atop ravioli filled with fish. Of course, it is also tasty when spooned over crostini or bruschetta.
