In Genoa, the dialect word tocco is so inextricably linked to the local meat sauce that, even though the word only means “sauce,” there is universal comprehension that there is meat in it. To describe another sauce, such as walnut sauce, one must specify that it is tocco de noxe or, in Italian, salsa di noci. What there is not universal agreement about is that there are so many different ways to prepare tocco in Genoa that what I present to you is an approximatio
