This honey is similar in preparation to rose honey, and can be used in similar ways, but it also has a very specific application. Ligurians know that chestnuts and violets make an exquisite flavor combination. You may use this honey to coat boiled chestnuts or to make a violet chestnut spread to use on toast or in cakes.
