Method

This “hot bath” for vegetables is a classic appetizer in western Liguria as well as in Piedmont, the region with which it is usually associated. In the past the Piedmontese used walnut oil and butter, but the Ligurian method, favoring olive oil, has now reached Piedmont as well.
