Here is a classically Ligurian pasta. It requires work and patience to make, and one finds it on Ligurian tables only for certain special occasions. Because it is so labor-intensive (although not difficult), Ligurians insist that the pesto served with these noodles also be handmade.

Method

The word mandilli (handkerchiefs) derives from Arabic, while sæa is the Ligurian word for silk. The former word connotes the shape of this pasta while the latter describes its texture. You will want to make your sfoglia using the recipe for Pasta Sfoglia alla Ligure. The sfoglia should be rolled as thin as possible. Then, using a kn
