Anyone who knows Italy can tell you that fresh salads are a standard side dish at many meals. Where condiggion (condiglione in Italian) differs is that it functions as a main course. While in the rest of Italy this is a new concept, Ligurians have eaten main course salads for centuries. Condiggion, eaten throughout Liguria, is particularly popular in the Ponente.
