This dish is a swirl of red, green, yellow and while - as colourful as the moving skirls of flamenco dancers. It is based on whatever ingredients are available. In spring that might mean peas, and late in the year squash or pumpkin. It often contains a few shrimps, too. The Migas (fried breadcrumb) topping is a popular Spanish accompaniment to eggs.
