Champiñones en escabeche is a good way to serve mushrooms in summer, and makes a refreshing alternative to the ever-popular mushrooms fried in garlic. Serve with plenty of crusty bread to mop up the delicious juices.

Ingredients

  • 30 ml/2 tbsp olive oil
  • 1 small onion, very finely chopped

Method

  1. Heat the oil in a pan. Add the onion and garlic and cook until soft. Stir in the tomato purée, sherry, water and the cloves and season with salt and black pepper. Bring to the boil, cover and simmer gently for 45 minutes, adding more water if it becomes too dry.
