Cabbages - Berzas - mark the landscape in Galicia, where the huge vegetables grow more than hip high. They are popularly cooked in stews in the many Mountain Regions of the South, and are frequently served with chickpeas or sausages, as in this recipe.

Ingredients

  • 50 g/2 oz/¼ cup butter
  • 5 ml

Method

  1. Melt the butter in a frying pan, add the coriander seeds and cook for 1 minute. Add the cabbage to the pan with the garlic and chorizo. Stir-fry for 5 minutes until the cabbage is tender.
