This dish is particularly associated with Ronda, in southern Spain, the home of bull fighting, where broad beans are fed to fighting bulls to build them up. It is also found elsewhere in Spain where it is known as Habas Españolas. If you have time, remove the dull skins from the broad beans to reveal the bright green beans beneath.

Ingredients

  • 30 ml/2 tbsp olive oil
  • 1 small onion, finely chopped

Method

  1. Heat the olive oil in a large frying pan or sauté pan. Add the chopped onion, garlic and bacon and fry over a high heat for about 5 minutes, stirring frequently, until the onion is softened and the bacon browned.
