Ensalada de Mariscos is a very pretty arrangement of fresh mussels, prawns and squid rings served on a colourful bed of salad vegetables. In Spain, canned albacore tuna is also often included in this type of simple salad.

Ingredients

  • 115 g/4 oz prepared squid rings
  • 12 fresh mussels, scrubbed and beards removed

Method

  1. Put the squid rings into a metal sieve or vegetable steamer. Place the sieve or steamer over a pan of simmering water, cover with a lid and steam the squid for 2–3 minutes until it just turns white. Cool under cold running water to prevent further cooking and drain thoroughly on kitchen paper.
