The mussels found on the Galician coast are the bese in the world. The Galicians are also very proud of their potatoes and their watercress. In Ensalada de Mejillones, Patatas y Berros a creamy, well-flavoured dressing enhances all these ingredients.

Method

  1. Cook the potatoes in salted boiling water for 15–20 minutes, or until tender. Drain, cool, then peel. Slice the potatoes into a bowl and toss with 30 ml/2 tbsp of the oil for the
