Naranjas con pelucas is a pretty variation on the normal orange salad. The slightly bitter, caramelized orange rind and syrup has a wonderful flavour and texture that sits in perfect contrast to the sweet, juicy oranges.

Ingredients

  • 6 oranges
  • 120 g/4 oz/generous ½ cup

Method

  1. Using a vegetable peeler, thinly pare the rind off a few of the oranges to make 12 long strips.
  2. Using a sharp knife, peel all the oranges, reserving the rind and discarding the pith. Reserve the juice and freeze the oranges separately for 30 minutes.
  3. Slice the oranges, reform and secure with a cocktail stick (toothpick). Chill.
