This recipe from Apulia dates back to the Daunian civilisation 2,500 years ago. It’s one of the simplest soups, but bursting with flavour and with a lovely texture – and the rocket is said to purify the blood.

Cover the potatoes with about 1.5 litres pints) cold water. Bring to the boil and cook for 10 minutes. Meanwhile, wash and trim the rocket.

Add the rocket to the potatoes (coarsely chopped if yo
