This very different soup is included for historical reasons. The original version contained only dried maize, chick peas and beans, flavoured with cheese – I have used fresh corn and added some flavouring ingredients. It is a speciality of La Spezia and the surrounding area – born out of a time when there was not enough flour to make bread, nor enough beans or dried maize to make a dish, and certainly no meat available to simply waste in a soup.
