From the region of Umbria, famous for its pork and sausage products, comes this dish of fresh sausages cooked with firm ripe white grapes. It’s a lovely combination and the slightly sour quality of the grapes reduces the fattiness of the sausages. Buy the largest grapes possible. Good quality fresh Italian sausages are available from all good Italian delicatessens. Other coarse sausages can be used provided they are made almost wholely of pork.
