From joyous Naples comes this lovely bright dish of dried cod stew with green and yellow peppers, finished off with tomato and chilli for extra impact. Salt cod is often paired with peppers, which are strong enough to stand up to its own positive flavour.


  • 800 g (1 lb 10 oz) dried salt cod
  • flour


Soak the fish overnight in cold water, changing this several times – a bowl standing in a sink under a running tap is ideal. This reconstitutes the fish and removes salt, and the soaking time depends on how long the fish is to be cooked later. At least 24 hours are needed if the subsequent cooking is brief.

Wash and skin the fish and remove any bones. Cut it into even chunks discarding
