Dried salt cod is transformed into a delicious meal by combining it with olives, sultanas, onions and tomatoes. This recipe comes from the desperately poor region of Basilicata in the arch between the heel and toe of the Italian peninsula. There is a similar recipe in Naples using squid, if these are any easier to get than baccalá. Cook them for 15 minutes only.
