This salad is a Calabrian speciality – part of the Christmas scene in the city of Cosenza. It’s certainly very unusual, definitely not heavy and the chilli will aid your digestion.


  • 2 endives, escaroles or frisée (which is a chicory), or a mixture, as white and curly as possible
  • 4 tablespoons olive oil
  • 3 cloves garlic, chopped
  • 1 sweet chilli and 2 dried hot chillies, seeded and chopped
  • salt


Wash and drain the leaves, dry very carefully and chop coarsely. Mix the leaves in a wide bowl, sprinkle with olive oil and scatter chopped garlic, chilli and salt all over it. Put a plate on top and a weight on top of the plate. Leave in a cool place to rest for 2-3 days before eating it.
