Pumpkin is very popular all over Lombardy, especially in the areas near Mantua which have been famous for their pumpkin dishes since the times of the Gonzaga court in the 16th century.
Remove all the seeds from the pumpkin and slice it thickly, removing the skin. Place the slices in a pan, cover with milk, bring to the boil and simmer until soft, but not breaking up. Drain and set aside to cool.
