If you grow courgettes or marrows you know how many flowers you get in relation to the number of vegetables! This is a marvellous way of using up all these lovely flowers in a dish which is light and satisfying. Sometimes the flowers tend to be bitter, so it is always best to soak them in some lemon-flavoured water for about 30 minutes, then drain and dry them very carefully.
