Although this cake comes originally from the Veneto region, it is extremely popular all over the country and is the kind of cake kept in the larder for when friends come to call – it can be served with cold white wine. It is deliciously crumbly, hence its name of ‘sandy’, and melts in the mouth. But its success depends very much on the correct working of butter and sugar together and in the oven being kept at the correct temperature.
