12: Roasted and Salted Pumpkin Seeds

This is really more of an improvisation then a recipe. A humble snack – similar to Mexican pepitas – that is also an answer to zero waste for pumpkins. Each year in the UK, we gut and waste thousands of tonnes of pumpkins in the name of Halloween. I am not saying not to celebrate Halloween, but to be mindful of what we do with the leftover pumpkins. That is the beauty of diverse Saudi cuisine, in which even pumpkin seeds get a VIP treatment.
