I ate salmon for the first time when I worked at Chamonix in the early days, and I loved it from the very first bite. I’ve always liked fish, and salmon fitted in nicely with one of my favourite food groups. The creaminess of smoked salmon works very well with the egg and avocado in this dish. Never underestimate the feeling of luxury and joy that can be derived from eating salmon for breakfast.
