Potatoes were plentiful when we were growing up. My oupa planted them and I learned from a young age that when you take something from the earth yourself, you should eat it in the simplest possible way so that you can savour the true flavour. A homegrown potato is a beautiful thing. This recipe comes from my ma’s love of smoor (braised onion and tomato) and she would make it on those occasions when she found herself with a house full of unexpected guests.
