Butternut soup is not a complicated thing. Everyone can make it and every chef has their own version. When I worked at Monneaux in Franschhoek, I was just beginning to feel comfortable enough to do my own thing. Up until then I had always followed the recipes of other chefs. Encouraged by Suster Becca (which is what I called my Antie Rebecca once we started working in the same kitchens), I began to experiment with butternut soup.
