A really good mushroom sauce is spectacular and should be part of everyone’s culinary repertoire. And this sauce has a nice subtle mushroom flavour. It’s not too overpowering, which I think is a good thing. People are always going on about porcini mushrooms because there is this great mystery surrounding them – the foraging in damp forests and the slight whiff of danger in case you pick a poisonous one...
