We never ate mushrooms growing up. Maryke is partial to stuffed mushrooms (made with mayonnaise!) but I sometimes forget about them. They’re not one of my go-to ingredients, but when I do use them – when I taste their subtle earthiness – I am always reminded of why I really do like them. I specifically love warm/cold salad combinations like this one, where the heat of the warm mushrooms releases all the flavours. Eaten with crusty read, this dish is pretty close to perfect.
