This dish is the reason you should always keep a supply of good-quality passata (tomato purée) in your pantry. The secret to this simple but deliciously filling pasta is the butter I add at the end. It gives a lovely richness to the sauce. Don’t be afraid of butter.

Ingredients

  • ¼ cup extra-virgin olive oil
  • 2 cloves garlic, thinly sliced
  • 2 cup

Method

  1. Gently heat the oil in a saucepan. Add the garlic and allow it to slowly infuse the oil.
  2. Add the passata and chopped tomatoes and cook on medium-low heat until the sauce starts to thicken and bubble.
  3. Add salt, pepper and 2 pinches of oregano.
  4. Cook the pasta in boiling, salted water until ‘al dente’, then drain (do not rinse).
