Baked Plum & Almond Pudding With Brandy Cream

I really like fruit puddings and I particularly like the sweet-sour taste of plums and how well they work in warm puddings such as this one. I only grew to love brandy once I started Reuben’s at The Robertson Small Hotel. Up until then I’d regarded it with some suspicion and distaste. Growing up, my associations with brandy weren’t always that positive; there were too many brandies on pay day, and brandy and Coke never really appealed to me. But in the Robertson valley I started to apprecia
