I found some of my ma’s pear chutney in the restaurant kitchen after her death, which is strange because she always hid the buckets filled with it in places where I could never find them. She had made large volumes of it because we used it in a specific duck breast dish. So after she’d died, there it was, and we continued using it like she had never left. But she had. And eventually the chutney ran out. And while I know how to make it and it tastes almost exactly the same, there is somethin
