Fennel is so underrated and not everybody likes it. But I certainly do. I’m crazy about its liquorice taste, and if a recipe requires fennel seeds I will automatically double the amount that is needed. I love what it does to food but it’s also great on its own. In salads, fennel is exotic and delicious; baked in butter or in cream like this dish, the bulbs become wonderfully sweet. Don’t knock fennel until you’ve tried it.
