Cabbage is perceived as quite a humble vegetable, and while there is nothing wrong with simple cabbage braised in butter, it does work wonderfully with these great Italian ingredients. Presented like this with beautiful Parma ham, Parmesan cheese and good balsamic vinegar and olive oil, it becomes something quite special. I once ate something similar to this in a small country restaurant in Turin, and the flavours have stayed with me ever since.
