  • 2 garlic cloves
  • salt and black pepper
  • 2 cups basil leaves

Method

  1. Make a pesto by pounding the garlic with salt in a mortar and pestle, then adding the basil and pounding it until it’s pasty. Add the pine nuts but don’t pound them too fine. Finally add the Parmesan, ¼ cup olive oil and pepper and mix them through.
