Silwervis (silverfish or silver bream) works so well on the braai. I like to eat the crispy skin of fish, and on the braai it’s always perfectly crispy and smoky. When fish is as fresh as can be, it needs very little fussing over. Use whatever whole fish looks the freshest on the day. There is something about being out in nature that calls for a beautiful fish to be prepared on a fire. It’s positively poetic. Like being in a movie…
