Ingredients
1 onion, coarsely chopped
1 garlic clove, crushed
5 fennel seeds
Method
- Pour 2 litres of water into a large pot and add the chopped onion, garlic clove, fennel seeds, lemon halves and salt.
- Boil for 10 minutes.
- Reduce heat, add the crayfish and cook for 8 to 10 minutes.
- Allow to cool slightly, halve the crayfish, remove the intestinal tract and serve (with lemon wedges., if you like).
