Ingredients

  • 1 onion, coarsely chopped
  • 1 garlic clove, crushed
  • 5 fennel seeds

Method

  1. Pour 2 litres of water into a large pot and add the chopped onion, garlic clove, fennel seeds, lemon halves and salt.
  2. Boil for 10 minutes.
  3. Reduce heat, add the crayfish and cook for 8 to 10 minutes.
  4. Allow to cool slightly, halve the crayfish, remove the intestinal tract and serve (with lemon wedges., if you like).
