This dish needs a lot of planning and thinking time, but really is worth every effort. The basic mixture makes more than you need for four, because 75 g (3 oz) will be enough per starter portion. The rest of the mixture can be stored in the fridge for a day or so and can be rolled into balls and coated with breadcrumbs then deep-fried as fo
