New Potato Salad

Ingredients

  • 900 g (2 lb) new potatoes
  • 1 large onion, finely chopped
  • 4–5 tablespoons Basic Vinaigrette
  • Salt and freshly ground black pepper
  • 300 ml (10 fl oz) Mayonnaise

Method

Boil the potatoes until cooked. While still hot, cut into quarters and place in a bowl. Add the onion and sprinkle with vinaigrette to taste. Season with salt and pepper. While the potatoes are cooling, they will absorb the vinaigrette, which will help the taste. When cold, bind with the mayonnaise to finish.
