Many alternatives can be made from this basic vanilla ice-cream recipe, a few of which I have outlined below.

In the basic recipe, vanilla pods are used. These can be quite expensive, but if you buy two or three pods and keep them in an airtight container with caster sugar, you will have all the taste you want in the sugar for the recipe. You can, of course, use the pods again and again by just topping up the container with more sugar. Failing this, a good, thick vanilla essence will also work.
