Another lovely ice-cream is made with praline, a toffee-type mixture of sugar and hazelnuts boiled together. Simply crush the praline pieces in a bowl and add to the vanilla ice-cream mix when it’s ready to be churned or frozen. This will be very sweet so it’s best to omit 50 g (2 oz) of caster sugar from the basic ice-cream recipe.
