This is a really sweet pudding, the one you want to eat plenty of but always regret afterwards! Here are two recipes which both work very well. The one using breadcrumbs is the more traditional, but the sponge and jam one is also delicious. The beauty of using sponge is that you can use up your Madeira cake when it’s past its best.
