This is an Italian classic, although the French have a similar version called pistou. It is a paste made from pine nuts, basil, garlic, olive oil and Parmesan cheese. It can easily be found in most delicatessens or supermarkets, but I’m going to give you a very simple recipe here. I make it without the Parmesan, which isn’t needed for all of my dishes. I like to use it in soups, sauces and dressings.
