Bellinis are a favorite brunch, bridal, or baby shower choice. These drinks originated in Venice, where they’re made with white peaches, Prosecco, and raspberry juice. A rhubarb Bellini will have a similar pink hue.

Ingredients

1 cup Rhubarb Simple Syrup, chilled
1 bottle Prosecco or dry sparkling wine, chilled<

Method

Add enough chilled Rhubarb Simple Syrup to each of 10 champagne flutes to fill each ¼ full. Slowly add chilled Prosecco to flutes, pouring at a tilt to preserve bubbles. Garnish, if desired, and serve immediately.
