Coconut is the basis for a lot of Keralan cooking and you’ll see the similarities between this and some of the other recipes I have included. However, they each have their own distinct taste. Many of the tempering ingredients are also the same; it is the method of cooking that creates the difference. It is the coriander in this recipe that gives it its character and vibrant colour.
