Kerala is a beautiful state in South India, famous for its lagoons and waterways. It has a very specific cuisine, of which this dish, flecked with curry leaves, coconut and softened shallots, is a perfect example.

Method

First, make the spice mix. Put the chillies, coriander seeds, turmeric, cinnamon, peppercorns and cloves in an electric grinder and process until you have a fine powder. Alternatively, use a pestle and mortar.
