A thoran is a Keralan stir-fry using freshly grated coconut, the basic spices being mustard seeds, curry leaves and chillies. Further south, towards Tamil Nadu, it is known as a poriyal. You can use numerous other vegetables, for example spinach, beetroot or carrot, as an alternative to the beans.
