Cut off all but 1 cm of the radish tops, cut the squash into 4, the mushrooms in 2 and the cauliflower and broccoli into florets. Peel and chop the garlic and shallots.
In a large pot, sauté the garlic and shallots in the olive oil, add the coriander seeds, then all of the mushrooms and vegetables except the broad beans. Moisten with the juice from the lemon, a
