  • Breast of mutton 2 kg
  • Dry haricot beans 200 g
  • Bouquet garni

Method

  1. The day before, soak the beans in cold water.
  2. Cook the beans in a large volume of water with the bouquet garni, onion and sliced carrots for 2 hours.
  3. At the end of the first hour of cooking, add the pieces of lamb. In a heavy pan, soften the shallots and the quartered tomatoes in olive oil, cover with white wine and add the tomato paste.
